Strawberry Gazpacho

Makes 2-4 servings

strawberry gazpacho

10 strawberries, halved – 2 for garnish, 8 for gazpacho
2 cucumbers, trim ends – ¼ for garnish, ¾ for gazpacho
1 large tomato, stem removed – ¼ for garnish, ¾ for gazpacho
2 red peppers, seeds and stem removed
2 limes juiced
2 Tbsp mint
1 oz buratta cheese
Salt and pepper to taste


1. Dice two strawberries, ¼ cucumber and ¼ tomato set aside for garnish.
2. In blender puree strawberries, cucumbers, red peppers, lime juice, mint, tomato, salt and pepper.
3. Pour into bowl, over buratta.
4. Garnish with strawberries, cucumber and tomato.
5. Serve chilled.
