Cucumber Salad

1 cucumber
1 green pepper
½ dozen cherry tomato
1 teaspoon honey (or to taste)
½ dozen cherries
Olive oil
Salt (to taste)
Pepper (to taste)


1. To make the dressing, combine cherries with equal parts honey and olive oil. To make the salad, slice cucumber and green pepper thinly, then dice. Quarter cherry tomatoes. Combine vegetables with dressing. Season with salt and pepper to taste. Chill and serve. Serves two.
