Cucumber Salad with Aged Cheddar

¼ cup aged cheddar
1 peach
1 cucumber
½ dozen cherry tomatoes
1 green pepper
½ dozen cherries
Olive oil
Salt (to taste)
Pepper (to taste)


1. To make the vinaigrette, combine equal parts cherry juice, peach juice and olive oil. Season with salt and pepper to taste. To make the salad, dice all vegetables and toss in vinaigrette. Crumble aged cheddar and sprinkle on top of salad. Serves two.
